Philippine Street Foods: Chicken Proven
I love street food. I have been eating it since I was in elementary school. From fishballs to peanuts to pungko-pungko. One of the newest street food favorites is the Proben or Chicken Proven. This fried chicken part is one of my favorite snacks when I was still working at Robinsons Cybergate and I would love to eat it when I get the chance. Have you tried this one?
Chicken Proven
Chicken Proven is made of the proventriculus of a chicken. The proventriculus is part of a bird's digestive system and the organ is connected to the gizzard. To make the chicken proven, this part is dipped in a batter then deep fried to a crisp. The end result is a sinfully good chicken nuggets that have a similar texture to fried gizzard and a taste like crunchy chicken skin. We usually pour some sauce or vinegar before enjoying it with some hanging rice or what we call puso locally. A serving is around 20 pesos.
Chicken Proven is not a Cebu original. I think this street food just emerged in this decade in the Queen City of South. Chicken Proven or Proben is actually very popular in Cagayan de Oro City. It has spread around the country to as far as Luzon. In Cebu, I can see several Proben stalls and a lot of people love it. Some popular spots here for proben would be near Cebu Doctor's Hospital, near Chong Hua Hospital, and near Sykes Building in F. Cabahug Street.
When I eat Chicken Proven, I usually finish a couple of servings with around 3-4 pieces of puso. I normally finish my meal with some soft drinks. Usually, I eat it for snacks but when I am trying to save up, the meal serves as my lunch. As an eating tip, I advise you get the proben that just came off the frying pan.

You can observe its maximum effect at 3 hours. For the best results, you should follow the instructions carefully. Shake the bottle and drink in its entirety.
