Ever since I tried the Siphon Coffee at Ironbound and the V60 Kalinga Coffee at Boots Coffee Bar, I have been wanting to learn more about the wonderful world coffee. I really enjoy talking to baristas and ask them about their coffee. Recently, I had a massive dose of coffee when I had an encounter with Eric Lim, the COO of Conlins Coffee Company and a certified Q grader.

What is a Q grader? A Q grader is someone who is licensed and certified by the Coffee Quality Institute based in California. Q graders are experts in tasting, cupping, and evaluating Arabica coffee. To become a Q grader, one must pass a strict 3-day exam that covers several subjects about coffee that includes identifying different coffee roasts, cupping, sensory skills, and sensory triangulation. Eric Lim is just one of the handful Q Graders in the country.


An afternoon with him was a valuable experience for me. There were so many things that I learned that day like Arabica has less caffeine than Robusta. I also learned about the different coffee roasts and I got reintroduced to some unique brewing methods.  I also learned about fragrance, aroma, and acidity.  I was able to sample delicious coffee using different brewing methods. It was indeed an awesome afternoon of learning.

Bluenotes Coffee offers 100% single-origin Arabica Beans.  Each origin has a different characteristic.  Coffees in Southeast Asia like the Philippines is earthy while coffee from Africa is fruity. Serenity Syrups are used to enhance the coffee experience. It is used to elevate coffee to another level. It adds a unique flavor to your cup like an almond latte.

The whole afternoon was an eye-opening experience. While the information was fascinating for me, I know that most of the people who frequent to cafes really do not care much about the quality of coffee that they drink.  They do not care how tedious the process is before coffee ends up in our styro cups.  For most of my generation, coffee is instant coffee. It is that bitter powder that grown-ups drink. For the younger generation, coffee could be expensive frappes or cheap 3 in 1s. Specialty coffee is kinda foreign to most of us. People like Sir Eric are  fighting an uphill battle on changing perceptions.   It is tough but it could be way worth it because the Philippines also grow a lot of coffee.  The improvement of quality will not only be beneficial to consumers and businessmen like Eric but also to hundreds coffee farmers in the country.
