Vegetarian Recipes: "Archival" Veggies by Tommy Osmeña
The second dish that former Cebu City Mayor Tommy Osmeña cooked during our dinner with him was what he called "Archival Veggies". This dish is named after Cebu City North District Councilor Nestor Archival who is a frequent visitor of Mayor Tommy and a vegetarian. In this recipe, the mayor uses okra and sikwa (spounge gourd or patola). This is a very simple recipe that even beginners can make at their own kitchens.

This is an excellent vegetarian dish that uses two very common vegetables. The okra-sikwa combination will be a big hit among vegetable lovers.

Ingredients:
2 pieces of sikwa and 5 pieces of okra sliced then boiled in a pot
Around 100 grams of fresh mushrooms sliced
oil for frying
2 pieces beef bouillon diluted in a few tablespoons of hot water
Directions:
1. Heat the oil and fry the sliced mushrooms
2. When the mushrooms are slightly cooked, you may add the vegetables including the soup. Mix it well and let it simmer
3. Add the bouillon mixture to give the dish some flavor. You may just use one bouillon first.
4. Taste the soup if it tastes right already or you may add some more of the beef bouillon mixture.
6. Give it a final mix then transfer the dish into a container. Serve.

Filipinos love to cook this way for vegetables. The sikwa and okra combination is surprisingly good. It was my first time to eat one dish with the two vegetables as ingredients. Even if the dish has no meat, the mushrooms gave it a good texture. I might just use salt, pepper, and soy sauce to season this dish in the absence of beef bouillion.
