Vegetarian Recipes: Cream of Spinach by Tommy Osmeña
In the previous post, I intimated that former Cebu City Mayor Tommy Osmeña knows his way around the kitchen. Today, I will share with you how to make Mayor Tommy's version of the Cream of Spinach. Tomas Osmena’s passion for cooking started when he lived in the United States during the Martial Law era and he got sick tired of eating TV dinners. He decided to learn how to cook to enjoy better food. Over the years, his love for cooking grew. He now considers cooking as a form of therapy. He cooks for his family or friends at least twice a week.
What's so different about the Cream of Spinach of Mayor Tommy is that it does not use any actual spinach at all since the vegetable is not in the local markets. Instead, he uses agbati (vine spinach) and kangkong (water spinach). According to him, the combination of the two is a good alternative for actual spinach because kangkong is fibrous while the agbati is slimy.
The vegetables that were used were bought in the Farmer's Market in Mambaling, that boasts of being the cheapest place to buy vegetables in the city. The Cream of Spinach a la Tommy Osmena promises to be a dish that is going to be enjoyed by everyone, especially kids. According to Mayor Tommy, this is an excellent dish to cook if you want children to start eating their veggies.

Tommy Osmena's Cream of Spinach

This is an excellent vegetarian dish that uses two unassuming green leafy vegetables and turn them into a favorite for people of all ages.

Ingredients:
250 grams of Vine Spinach (Agbati) - chopped and blanched
250 grams of Water Spinach (Kangkong) - chopped and blanched
1 bulb of shallots - chopped
butter for frying
1-2 cans of Campbell's Cream of Mushroom Soup
Fresh Milk (optional)
Directions:
1. Fry the shallots using butter in a saucepan using medium heat.
2. Wait for it to be a little bit transparent, then add a can of Cream of Mushroom soup. Mix it well.
3. Add the blanched kangkong ang agbati.
4. Check the consistency of the dish. You may add some more cream of mushroom soup to make it creamier.
5. You may add fresh milk to make the dish whiter. Mayor Tommy thinks that the dish would look great if it is a bit whiter so he normally adds a half cup of fresh milk.
6. Remove from fire and then serve.

The Cream of Spinach was a delightful dish. It is good with rice, but it would be even better with some toasted garlic bread. The flavor is really mild and consistency is very creamy. Kids will definitely love it because it does not have the bitter vegetable taste. This dish has no meat, which also makes it perfect for the vegetarians and the people who have a restrictive diet.
